Stuffed Peppers
Since Winter is still upon us, comfort food is still in action. One meal I always loved is stuffed peppers. It fills me up, has a ton of flavor, and just overall looks beautiful! It's been a long time since I made stuffed peppers and figured since I had all the ingredients, why not give it a try & share the recipe.
Ingredients:
• 1lb of Ground Turkey
• Bell Peppers
• 1/2 cup of White Rice
• Tomato Paste
• Cheese of choice (optional)
• Oregano
• Fresh Parsley
• Salt & Pepper
Directions:
Preheat your oven to 400ºf
Start your rice in a rice cooker or stove top while browning the ground turkey. Add Oregano, Parsley, Salt & Pepper
While rice and meat is cooking, clean and chop off top of peppers. I used the tops of the peppers and diced it up and added it to the pan with the meat to simmer. Place peppers in pan with a little olive oil.
Once meat has been browned add 2 or 3 Tbs of tomato paste into with a little water and stir in it until evenly distributed.
Once rice is cooked add into pan with meat, stir in and let it brown a little.
Add mixture into the peppers then add a think layer of tomato paste. Then top with some cheese.
Cook for 25-30 min slightly covered.
Add fresh Parsley on top as garnish and ENJOY!
